Nut Butter Stuffed Mug Cake

There’s no denying my love…

…and last night, something epic happened: a NuttZo stuffed mug cake dessert!

Nut Butter Stuffed Mug Cake
Serves: One

Ingredients
1 Tbsp Almond Flour
1 Tbsp Peanut Flour
2 Tbsp Natural, Unsweetened Apple Sauce
3 Tbsp Liquid Egg Whites
1/2 Tbsp Nut Butter (I used  Peanut Free NuttZo)*

Directions
1. In a small bowl, combine almond flour, peanut flour, apple sauce, and egg whites. Mix well.
2. Spray a mug with nonstick cooking spray and pour half of the batter in. 
3. Place nut butter in center and top with remaining batter.
4. Microwave for 1 minute.

Dinner

Now that we’re all caught up on last night’s dessert, I guess we should catch up on dinner, huh?

As I briefly mentioned, I had a very special visitor arrive last night!

Maura’s here for the weekend!

Just like our parents, Maura also practices a vegetarian lifestyle. Since Matt and I love these roasted veggie burgers, I decided to once again make them this week. Last time Maura visited I made lentil almond burgers, which we all really enjoyed so I thought she’d like to try these, too!

Last night’s burgers were made into paninis and paired with roasted broccoli. Yes, that totally happened.

Bread, hummus, spinach, tomatoes, and a roasted veggie burger pressed into perfection!

Workout

This morning my alarm went off and I was actually feeling well rested. Yesterday when my alarm went off, I was in the perfect dreaming stupor. I threw my running clothes on, tied my shoe laces, and hit the pavement. 5 miles came and went pretty quickly!

Breakfast

Overnight oats in an almost empty nut butter jar are the best. What’s even better? When it’s chocolate NuttZo!

Yesterday I put together 1/3 cup oats with 1/2 cup plain Greek yogurt, 1/4 cup cottage cheese, 1/2 cup almond milk, 1 Tbsp chia seeds, and 1 Tbsp ground flaxseeds in my jar and gave it a good shake. This morning I turned my oats into chocolate covered cherry oats!

If you follow me on Instagram, you know I’ve kind of been digging the “covered cherry" train lately! To make these, I simply topped my oats with chocolate peanut flour and warmed cherries!
