Breakfast has always been my favorite meal of the day. I may have already mentioned this on the blog, but just in case I haven’t…here’s the story!
I have always been a morning person. I would wake up at 4 a.m., and subsequently wake my parents up. They’d turn on some cartoons and I’d eat a bowl of Kix cereal. Around 6 a.m. my dad would be getting ready for work, and I’d eat another bowl of Kix with him. 7 a.m. rolled around and my sisters would be getting ready for school. Of course I couldn’t let them eat breakfast without me, so I’d once again eat breakfast. That’s right, I would eat 3 breakfasts every morning.
My meals have always been small, but frequent. I’m not quite sure why that is, but my mom said she’s just leave my food out for me all day long and eventually it would all be gone. Not much has changed as I still like to have snacks throughout the day.
Which brings me to my next favorite meal of the day: “midnight snack”! And last night’s dessert was a good one!
I combined 1 Tbsp coconut flour, 1 Tbsp chocolate protein powder, 1 Tbsp unsweetened dark cocoa powder, 1 Tbsp chocolate peanut flour, 1/4 cup unsweetened applesauce, and 3 Tbsp liquid egg whites into a mug sprayed with nonstick cooking spray. I microwaved it for one minute, and topped it with 1/2 Tbsp unsweetened dark cocoa powder mixed with just enough applesauce to mix it together.
I even had Matt try a bite and just told him it was “chocolate cake”, to which he immediately replied “YUM!” You know it’s good when I can trick his sweet tooth! ;)
Going back to my first favorite meal of the day: breakfast! Even though it’s a rest day, I still felt like making up a bowl of oatmeal. Today was a bit different though, so bare with me!
I used my apple cinnamon French toast oatmeal recipe and swapped the apple for a peach for a delicious baked oatmeal!
I topped it off with a dollop of Greek yogurt and cinnamon! Perfection.
