Pesto Fish Tacos

Good morning friends!

As I alluded to yesterday, I had a very special evening planned: My best friend Kendall came over for dinner! Since we started our clinical rotations we no longer get to see each other every day… and since I had been traveling, we had really not seen each other in for-ev-er

One of my favorite meals to make when we have people come over is fish tacos! Its so easy to just throw everything on the table and let people choose what they want to put in their tortillas. 

I filled our table with whole wheat tortillas, lettuce, cheese, tomato, sautéed onions, avocado, homemade pesto, and baked tilapia with a mix of seasonings. I wanted to make it a bit summery, so I thought fresh pesto was the perfect addition!

I filled my plate with two tortillas layered with pesto, lettuce, tilapia, sautéed onions, tomato, and avocado.

It was the perfect light and refreshing Mexican night spent with two of my favorite people! :)

After dinner we headed off to Matt’s softball game!

I was a proud little wifey when Matt had the bases loaded with two outs and hit a homerun! He also had some great plays on defense with a couple of double plays, too!
Maybe it was the dinner… ;)

Now I’m sitting at a local coffee shop while I get some paperwork done before heading home from the gym. An ice cold smoothie is calling my name!
