Cinnamon Peanut Butter Stuffed French Toast

Roses are red, yoga is great,
who needs a Valentine, when I can bench my own weight!
Violets are blue, and peanut butter is Heaven,
I’ll save you a kiss, after rep number seven.
Bananas are yellow, and yogurt is Greek,
squats are gonna be the only thing to make my knees weak.
Oatmeal is perfect and veggies are divine,
the dream to be strong is what I’m making mine!

Workout

I started my morning at the gym with a 6 mile run. Today was a tempo day so I started at a 7.4 speed for one mile, then progressed to 8.4 mph for 4 miles, and cooled down at a 7.5 speed for the last mile. I was certainly sweaty by the end of the run!
Breakfast
Breakfast was a special treat this morning! I wanted to wake up a bit earlier and make Matt a nice Valentine’s breakfast. It’s our first Valentine’s as a married couple so I wanted to do something special. He’s typically rushing in the morning to get out the door so this morning I took care of the first meal of the day.

I scrambled up two eggs with Silk vanilla almond milk, vanilla extract, and cinnamon. I let two slices of bread soak in the mixture for a few minutes while I gathered the rest of my ingredients. Next, I preheated a skillet on medium heat with nonstick cooking spray and added my bread. I let each side cook through before cutting the edges off the bread to make heart shapes.

Then I layered The Laughing Cow Cinnamon Cream Cheese, peanut butter, and fresh strawberries in the middle for a deliciously decadent stuffed French toast!

Looks like we got off the healthy eating track huh?
Actually this breakfast comes in at about 375 calories!

Served with the excess bread that I cut off for the hearts, because I hate wasting food! And syrup for Matt. Sans syrup for me!
I’ve been fortunate enough to spend the past 7 Valentine’s Days with Matt as my Valentine and could not be more fortunate! This was a great way to start to any day, but especially Valentine’s Day!
Lunch
Every Sunday I spend about 1-2 hours making up some food for the week to make weekday meals a little easier. This week I decided to grill up some chicken breasts, which was a fantastic idea! When looking at budgeting, buying chicken breasts is way cheaper than deli meat!

When lunch rolled around, a salad sounded perfect. I love how filling salads can be when you load them with veggies and protein!
In my salad:
Romaine
Spinach
Roasted Zucchini
Roasted Yellow Squash
Cucumbers
Grilled Chicken

I heart salads. I heart veggies. I heart leftover chicken that make salads really easy to put together!
