Green Eggs

Well Tennessee has had some of the craziest weather this past week.

Tuesday we hit 70 degrees. That night, 8 tornadoes made their way across the state.
Wednesday we dropped into the 30s and had some flurries.
Thursday night we got hit with rain, which ended up freezing into ice.
And to round it out, last night we got a bit of snow.
If the groundhog tells me that more winter is on it’s way…I might go crazy. I’m ready for the summer!


I managed to make my way to the gym this morning, but I was most certainly alone on this one! 

As I start my new challenges for the month, I started with a baseline of 4:07.4 plank and 50 squats. 


Oh Saturdays, you are so wonderful. I love weekend breakfasts! Eggs, pancakes, waffles…they just scream weekend to me. Today was an omelet kind of morning!

Nothing like starting your morning with a little smile, right? ;)

My omelet consisted of 1 egg + 4 egg whites, roasted zucchini, spinach, and edamame.

"I like green eggs and ham! I do!! I like them, Sam-I-am!”

Edamame might not be your first choice in putting into an omelet, but let me tell you: you need to try it! It adds amazing flavor and texture to the meal!
