Craving Crunch

Happy February, friends!

For some reason during the entire month of January I kept writing the month as “July”. I have no clue why, but I’m hoping this new month I’ll actually be able to keep up!

Since it’s a new month, let’s also revisit my 13 goals for 2013. January’s goal was to complete my first full marathon, which I accomplished in Disney World! This month, I’ve designated the goal of strength training 3 days per week. I will keep you updated on how I do this month!

In addition to the original goals I had set for myself over New Years, I’ve also been introduced to some additional group challenges in the healthy living blogosphere.

  • With Wendy from One Tough Mother Runner, I am continuing on the Planks A Lot challenge from last month. This month we are continuing on with our planking and adding in some squats! If you want more information, click here!
  • With Lindsay from The Lean Green Bean, I am participating in the Healthy sELF challenge. For three days of each week there is an assigned challenge to improve your overall wellness. For more information, you can check out this page!

Group challenges, just like group exercise, are a great way to keep yourself motivated and stay focused. It’s fun to encourage one another, as well as challenging yourself!

Lunch

Now that this month’s fun goals are set, let’s talk the other part of healthy living (and possibly my favorite part): FOOD. For lunch today I was craving a little crunch!

I grabbed a Flatout flatbread and rolled it up with The Laughing Cow Garlic Herb cheese, spinach, and bell peppers.

I grilled it up to perfection and snacked on some raw mini peppers and an apple.

Crunchiness for the win!

By the way, I just realized that this lunch is practically the exact thing I had yesterday. Ah well…when the flavors are good! :)

Dinner

It’s been a long time since Matt & I had some chicken fajita quesadillas!

I grabbed two small La Tortilla Factory multibran tortillas and layered in The Laughing Cow Chipotle Queso Fresco cheese, baked chicken, and sautéed peppers and onions. Topped with lots of salsa!

I don’t know what happened, but I grabbed a jar of salsa that say “medium” and it most certainly is not! My mouth was burnnnnning!

It’s a good thing I like spice!
