Mixed Berry French Toast Oatmeal

Yesterday I tried a new breakfast and I’m telling you it was so good, that I ended up repeating it again this morning! I have seriously found my new favorite way to eat oats.

I’m not joking when I tell you that this ended up keeping me full for over 4 hours. I pumped up my typical bowl of oats with liquid egg whites for some protein, a little nut butter for some healthy fats, and berries for some sweetness. It was a deliciously satisfying meal that I will probably be repeating over and over again!

Mixed Berry French Toast Oatmeal
Serves: One

Ingredients
1/2 cup Old Fashioned Oats
1/2 cup Silk Unsweetened Almond Milk
3/4 cup Liquid Egg Whites
1/2 tsp Vanilla Extract
1/2 Tbsp Ground Cinnamon
1 Tbsp Nut Butter (I used almond, but any nut butter would be great!)
1/4 cup Mixed Berries (I used blueberries, raspberries, & blackberries that I had in the freezer, but when they’re back in season I will definitely be doing fresh fruit!)

Directions
1. In a saucepan, combine oats and milk. Bring to a boil then reduce heat to medium and cook addition 3 minutes.
2. Lower heat to medium-low and add liquid egg whites, extract and cinnamon. Continue stirring for about 2 minutes, until eggs are cooked through and everything is nice and fluffy.
3. Add nut butter of choice and stir to combine into oats.
4. Add berries, stir, and dig in!
