My First Green Monster
Hey there!
I’m so glad you guys enjoyed this morning’s post. I am definitely going to be taking that recipe and making all sorts of different flavored baked oatmeal cups! I’ll be sure to share with you what I come up with!
Workout
I started bright and early this morning and got a lovely 4 mile run in. I started at a 6.7 speed for 2 minutes, then worked my way up to 8.2 mph. Since it was a shorter run, I went ahead and cranked up the speed. What can I say, I like to go fast! While on the treadmill, I decided that any morning that starts with a run, is a good one!
Breakfast
Well it just so happened that I was short on time this morning, so I grabbed a baked blueberry oatmeal cup and made myself a smoothie.
Not just any smoothie, though!

I enjoyed my first big green monster!
In my green monster:
- 1 cup Silk Unsweetened Almond Milk
- 1 scoop Vanilla Protein Powder
- 2 cups Spinach
- 1 frozen Banana
- 1 Tbsp Peanut Butter
- 1 Tbsp Ground Flaxseed
Lunch
So as I sit here typing about lunch, which was oooooh about 6 hours ago, I still can’t get over how good it was!

I started with my “cold” side of turkey roll ups. The Laughing Cow Swiss cheese and spinach all wrapped up in a little deli turkey. The creamy Swiss mixed with the spinach and turkey was so good! I forgot how much I enjoy this simple lunch item!

Now this? This is the star of the show.

Half of a sweet potato baked and mashed a bit, topped with leftover chicken taco chili. Um. Yes. Absolutely amazing. I would HIGHLY recommend this lunch!
Dinner
A recent obsession: spaghetti squash. I first tried it over Thanksgiving as a lasagna, then made it again over New Years. I enjoyed it as leftovers, which definitely were delicious! Well tonight, I decided to try my hand at a spaghetti squash dinner to replace pasta.


This bowl consisted of one sausage-less link grilled, sautéed spinach, mushrooms, and zucchini, and topped everything off with some homemade tomato sauce.

This day was full of good eats definitely worth repeating! Don’t be surprised if you see these ones again!
