Quite The Surprise

Well, well, well. I had quite the surprise today!

Thank goodness I checked my schedule last night, because I had thought classes started Wednesday. Nope, they started today! It was nice to see everyone again, but man…I was sold on not starting school work for a few more days!

Workout

This morning I started with the same routine I did Saturday from fitsugar. It is the perfect little way to start the day.

Breakfast

Since I was in a bit of a rush this morning, I didn’t get a chance to snap a picture, but rest assure…it looked just like this.

A bowl of apple pie oats! Of course I made it in some tupperware and took it to work with me. Thank goodness they don’t mind me eating there because I hate rushing through meals.

Lunch

I thankfully had enough time between work and classes to make a pit stop at home for some lunch. You would think that I would be sick of eating leftovers for lunch, but I certainly am not. It makes meals super easy!

I had a serious craving for veggies, so I went with it. I grabbed the broccoli and cauliflower from last night, sliced up some zucchini, added some spinach, and tucked it all inside a Flatout flatbread with The Laughing Cow Swiss cheese.

I also grilled up a Quorn turk’y burger and enjoyed it in a lettuce wrap with cheese and salsa.

Lastly I ended the meal with Greek yogurt. I love when I have a bunch of different components to a meal. For me, it makes it much more enjoyable. This wrap is a great way to sneak veggies into a meal…delicious and fun to eat!

Bet you can’t guess what dinner tonight is going to be! ;)

Ok fine, if you guessed lasagna, you’d be correct! :)
