Oh, Sweet Tuna
Today has just been flying by! I have had all sorts of deadlines due today. It definitely helps to keep me busy, which I oddly enjoy because I am one that cannot sit still for 5 minutes. Growing up if I ever became bored, my mom would quickly give me something to do because she knew I had to always be on the move. It’s those small antics that I find unique and appreciate in myself!
Lunch
Oh, sweet deliciousness. I have perfected the tuna combo. I am telling you, this is the absolute best way to have tuna! As always, I had my tuna combo with crackers for dippin’. I also ended my meal with a container of Fage plain Greek yogurt. This lunch was packed with protein!

In the combo:
1 can Tuna, drained
1/2 Green Bell Pepper, chopped
1 Celery Stalk, chopped
1/2 cup Cucumber, chopped
The Laughing Cow Swiss Cheese Wedge
2 Tbsp Raisins
Cinnamon
Combine tuna, pepper, celery, and cucumber in a bowl. Add cheese and mash into mixture. Add raisins and cinnamon and toss together.

Dinner
While I was talking to my sister about a week ago she said that her husband had saw my recipe for creamy quinoa salad and wanted to try it. They added some chicken into it for extra protein and I thought that was a fantastic idea! So tonight, the craving struck.

I baked some chicken while I roasted broccoli, zucchini, and yellow squash. After giving everything a good chop, I added it to the quinoa and marinara. I didn’t have The Laughing Cow garlic herb cheese wedge, but I did have Swiss so I used that instead. It was definitely just as flavorful and mighty delicious!

The addition of chicken was fantastic. It was almost like my baked eggplant chicken quinoa parmesan? My family and I clearly love Italian inspired dishes!
